Cranberry 'stuff' alternative to sauce

I'm about 90 percent too late with this but reader Johna Craft of Kailua isn't to blame. She sent me a letter three weeks ago labeled "Read this soon" — and I did. But then the envelope began swimming around in the murky waters of my briefcase (which is actually a very cool shopping bag from Trader Joe's, appropriate for a food editor).

And the holidays flew by (did they go faster this year, or is it just me?).

So, either use this tomorrow, if you're having turkey, or tuck it away for next year and don't blame Johna for it being late.

"Regarding your 'Turkey 101' article (and) the person who doesn't like cranberry sauce. Well, I have the best solution ever! Our friends and family who don't like cranberry sauce really like this. It's quick, easy and you can make it several days ahead of time, if you want to. It's been passed down through our family and has no name I'm aware of. Just make one up. It's delicious."

I decided to call it . . .

NO NAME DELICIOUS CRANBERRY STUFF

  • 2 (6-ounce) packages raspberry Jell-O

  • 2 cups boiling water (do not add cold water)

  • 1 (16-ounce) can whole-berry cranberry sauce

  • 1 (20-ounce) can crushed pineapple, with juice

    In a bowl, combine Jell-O and boiling water. Stir well to dissolve gelatin. Add cranberry sauce and pineapple. Place in refrigerator overnight, stirring once during the "setting" process. Serves at least 12 and keeps, tightly covered, for a week in the refrigerator.

  • Per serving: 130 calories, 0 g fat, 0 g saturated fat, 0 mg cholesterol, 40 mg sodium, 33 g carbohydrate, 1 g fiber, 28 g sugar, 1 g protein

    "I usually double the recipe to make sure I have extra for our holiday leftovers," wrote Craft. (And, as we all know, leftovers are almost the best part of a turkey dinner.)
