Thornton hired as executive chef at Fairmont Orchid

The Fairmont Orchid, Hawaii will welcome Executive Chef Collin Thornton to oversee the culinary operations of this 540-room luxury resort on January 21.

The Big Island resort has five restaurants and extensive banquet and event functions. Most recently Thornton was at The Fairmont Chateau Laurier in Ontario, Canada as Executive Chef. He brings nearly 17 years' experience with him beginning in 1992 as Apprentice Chef at the Petroleum Club in Edmonton, Canada.

Progressive positions since have included Junior Sous Chef at The Fairmont Hotel Macdonald in 1995, Banquet Chef at the Westin Casuarina Resort in the Grand Cayman in 1998, Executive Sous Chef at The Fairmont Southampton, Bermuda in 2000, Executive Sous Chef at The Fairmont Royal York, Toronto, Canada in 2003 and most recently Executive Chef at The Fairmont Château Laurier, Ottawa, Canada since 2006.

His time in the Cayman Islands sandwiched between cold stints in Canada infused a love of sunshine, readily available fresh fish, produce and island culture and enhanced his desire to return to a warm island climate with his wife and their three-year old son.
