Moms share ideas for dinner in a jiffy

By Esme Infante Nii

Thirty minutes to dinnertime. You haven't even cooked rice yet. What to do?

A woman who goes by the screen name "mrs" asked the moms on www.HawaiiMomsLikeMe.com for the menus they use in a pinch. Among them:

  • Breakfast for dinner (waffles, eggs, sausage; or omelets)

  • Spam stir-fry with any frozen vegetables

  • Saimin with heavy garnishes (meat, veggies)

  • Skillet casserole of hamburger, vegetable soup, garlic, onion, frozen veggies and tomato sauce.

More menu ideas can be found in the site's Recipes, Meals, Snacks forum, and the Recipe Swap group.
