The Halekulani hotel, which has entered into a new partnership with Imperial Hotel in Tokyo, will host two Imperial chefs next week who will prepare a multicourse menu to be served in the hotel's oceanfront fine dining room, La Mer.

The menu will be available May 5 to 9 and will be the work of chef Kenichiro Tanaka, executive director and grand chef of The Imperial, and chef Thierry Voisin, chef de cuisine of Les Saisons at The Imperial. The five-course meal will replace chef Yves Garnier's degustation menu for that period.

They're calling it a gastronomic tour of the Imperial's award-winning cuisine. On the menu:

  • Provencale tomato in citrus jelly with basil sorbet.

  • Hot and cold: crab with eggplant, green olive tapenade and almond oil.

  • Oven-baked cod with oceanic sauce, crushed potatoes and butter.

  • Grilled sirloin of beef with mousse of green asparagus and creamed morels.

  • Rose of Reims biscuit sabayon with rose Champagne sorbet and red fruit.

    The menu must be ordered for the whole table and is available until 9 p.m. nightly. The menu is $125 without wine pairings.

    La Mer is open from 6 to 10 p.m. nightly. Reservations are required and there is a dress code (jackets for men, resort formal for women). Reservations are required: 923-2311.
