Bora Bora featured on Chef Mavro menu

Just back from his first trip ever to French Polynesia, chef George Mavrothalassitis of Chef Mavro restaurant in Honolulu has inaugurated a fixed-price, three-course meal inspired by culinary encounters in Bora Bora.

Mavro, as he's universally known, had been invited to do a cooking demonstration and prepare a special meal for the maiden voyage of the Seabourn Odyssey. While in Papeete, before heading to Bora Bora, he happened onto a cooking demonstration and brought some ideas back for inspiration.
The three-course, $59, "Back from Bora Bora" menu, available from Feb. 23, will include Poisson Cru (bigeye tuna with lime, coconut and vegetables), Porc Laque a L'Ananas (glazed pork with vanilla sweet potato puree and coconut spinach) and a taro pudding with banana ice cream. Also included: pre-appetizer, pre-dessert and hand-crafted candies.
