James Beard Award-winning chef George Mavrothalassitis, known for his passion and near-fanatic commitment to quality, long dreamed of a little place where he could prepare just what he felt like each night. He would invite regulars to experience his signature way with produce carried to his door by farmers and fish selected each morning at the auction. Chef Mavro isn't that, exactly, but it's close and one of a kind. The menu changes seasonally (with select dishes retained); every dish is matched with a wine chosen in a staff tasting; guests can mix and match courses. Place yourself in his hands, sip a kir and relax.
