HILO BAY CAFE

This small, chic bistro has Hilo very excited. It's operated by the Island Natural Market & Deli folks, and as co-owner Kim Snuggerud rightly says, it's difficult to characterize. There's an emphasis on local, organically grown produce; the dishes themselves, created by chef Joshua Ketner, are ramped-up American standards and the decor is very contemporary. Customer favorites include the lox salad, the house-made ravioli, the grilled jumbo pork chop and the slow-cooked pork ribs. Vegetarian-friendly.
