HELENA'S HAWAIIAN FOOD

A landmark business for more than half a century; the James Beard Foundation called it "a regional classic," and rightly so. Helen Chock's specialties (these days cooked by grandson Craig Katsuyoshi) include Hawaiian standards but particular favorites are the home-smoked short ribs pipikaula-style, squid lu'au and boiled butterfish collar with gravy.
