ITALIAN (AND PIZZA)
All the major cuisines are represented in Hawai'i, though, of course, Asian and Southeast Asian restaurants are the most common. Here, we've selected a representative sample. (More Asian and Southeast Asian restaurants can be found in the chapters on dim sum, noodles, sushi bars, izakaya, takeout and yakiniku.)

A New York pizza, co-owner Anthony Romano explains, should be "thin-crusted, lightly sauce, crisp on the top but with just a bit of give." The pies come in three sizes with all the usual toppings but also specialties such as white sauces, the bestselling Brooklyn combo (pepperoni, sausage, mushrooms, green peppers, onions), pesto and barbecue. You can get hoagies, calzones, Philly cheese steaks, pasta and - hey! - take the cannoli.
