  FINE DINING

It's difficult, sometimes, to differentiate fine dining from casual in Hawai'i — restaurants here are rarely formal and less than a handful have a dress code. When we think of fine dining, however, we think of careful attention to detail, in food, in service, in surroundings.

Aaron's Atop the Ala Moana

Aaron's 36th-floor view displays the cityscape as a feast for the eyes. Continental cuisine executed with contemporary flair has some ups and downs, but certain dishes rise above the rest, such as escargot with a garlic puree and blackened double pork chops with pineapple marmalade, curry sauce and toasted macadamias. Show-stopping pyrotechnics in its signature dessert — strawberries Panzini flambe — and a 2,000-bottle wine cellar add to a memorable dinner experience here.

Ala Moana Hotel, 410 Atkinson Drive, top floor. 955-4466. Dinner: 5:30-midnight Sunday-Thursday, 5:30-2 a.m. Friday-Saturday. Reservations recommended. Valet and self-parking. VS, MC, AX, DC, DS, JCB. Checks accepted. $$$.
