  FINE DINING

It's difficult, sometimes, to differentiate fine dining from casual in Hawai'i — restaurants here are rarely formal and less than a handful have a dress code. When we think of fine dining, however, we think of careful attention to detail, in food, in service, in surroundings.




Bali by the Sea, Hilton Hawaiian Village

The sound from the waterfall below and the sight of Waikiki Beach a stone's throw away are the backdrop to the Hawai'i Regional creations of chef Roberto Los Ba–os. Preparations such as kalua pork and panko-crusted taro cakes along with Alaskan wild king salmon steamed in a ti leaf, seasoned with Hawaiian red clay salt, served with Kamiya papaya relish and chili-pepper water re-interpret traditional island fare. The dining room decor may be a little dated, but the food isn't, and whether you get a beachfront table or not, the very attentive wait staff will ensure a smooth dining experience.
