  FINE DINING

It's difficult, sometimes, to differentiate fine dining from casual in Hawai'i — restaurants here are rarely formal and less than a handful have a dress code. When we think of fine dining, however, we think of careful attention to detail, in food, in service, in surroundings.

Nick's Fishmarket, Waikiki Gateway Hotel

It's easy to see why Nick's has remained a consistent favorite over the years: a romantic cavern-like setting, intimate booths and timeless continental preparations of fresh seafood in addition to attentive wait staff. Toss in a substantial cocktail list, tableside service, flambeed desserts and Vanbana pie on a Ritz cracker crust to go with that live Maine lobster plate, and you've got a restaurant that grandparents, parents and couples enjoy.

Waikiki Gateway Hotel, 2070 Kalakaua Ave. 955-6333. Dinner: 5:30-10 p.m. Sunday-Thursday, 5:30-11 p.m. Friday-Saturday. Reservations recommended. Valet and self-parking. VS, MC, AX, DC, DS, JCB. No checks. $$$.
