  FINE DINING

It's difficult, sometimes, to differentiate fine dining from casual in Hawai'i — restaurants here are rarely formal and less than a handful have a dress code. When we think of fine dining, however, we think of careful attention to detail, in food, in service, in surroundings.




Orchids, Halekulani Hotel

Chef Darryl Fujita is a gem. While locals rightly think of Orchids for the lavish brunch (See Brunches, Page 44), we believe Fujita's star shines most brightly in the executive lunches he devises for weekday business customers, and in the dinner menu. We have been delighted with combinations such as Peking duck and rice noodle salad, 'ahi fried rice and Island-raised moi on artichoke with edamame with sorrel cream and port wine glaze. His style is appropriately sophisticated for this AAA Four Diamond property but paired with an Island touch that banishes pretension.
