Kin Wah Chop Suey
Anytime you see chop suey in the name of an Island Chinese restaurant, you know what to expect: Cantonese food as interpreted in Hawai'i for four generations with an avalanche of menu items that range from authentic (beef with bitter melon) to thoroughly Westernized (lemon chicken). Noisy and always busy, inexpensive Kin Wah — headed by chef-owners Jian Wei Cheng and Kin Hang Kwok — is a classic of this type. Try the ginger won ton.
