In 2006, the Kahala got a new name and new owners and Hoku's got a fresh face. But it remains one of the most beautiful dining rooms on the island high-ceilinged, dotted with artworks, with walls of windows that frame the view of the blue sea. Chef Wayne Hirabayashi revamped the menu pretty thoroughly; only the signature 'ahi poke dip, wok-fried prawns, the seafood tower and Chinese-style whole fish survived the cut at dinner. Though he will continue to make use of local ingredients, Hirabayashi plans to introduce more fish specials from elsewhere. Among the subtle new touches: Christofle silver and Italian bone china, new flooring, fresh upholstery on banquettes and chairs. Highly recommended: the salt-crusted rack of lamb for two, the Chinese roast duck consomme, the mango tart tatin (in season).
