BEST FINE DINING RESTAURANT: CRITICS' CHOICE
Chef Mavro |
|
James Beard Award-winning George "Chef Mavro" Mavrothalassitis, who grew up near Marseilles, realized a longtime dream in this extraordinary restaurant with its select, seasonal fixed-price menu and tranquil, light-infused neo-Hawaiian decor, freshly renovated with new banquettes in the main room. Mavro's gift is to extract the essence of a food, and then enhance it, so that for example a tiny drizzle of cilantro dressing on a delivered-that-day, perfectly poached shrimp sings in your mouth of spice and sea. Unique here is the method by which the wines are paired with the dishes; manager Todd Ashline ferrets out several selections, then the staff gathers for a lengthy day's tasting, voting for the best matches. The menu changes quarterly.
