Tuna terrific: Roy's Po'ipu Bar & Grill's spicy 'ahi poke brings a new level of zing to the traditional Hawaiian cubed raw-fish dish.

Roy's Poipu Bar & Grill
With a Kauai-born chef running this Roy's outpost and a laid-back vibe, the restaurant is a perfect mix of real Garden Isle and world-class food. Along with the signatures found on every Roy's menu (the misoyaki butterfish is a local fave), are chef Matt Dela Cruz's specials. An alumnus of Jean-Marie Josselin's defunct Pacific Bakery and Grill, Dela Cruz mixes his Gallic training and feel for local ingredients in dishes such as coriander-tahini-crusted snapper in an inamona brown-butter soy vinaigrette.
