An evening sipping at Vino, part of the D.K. Kodama restaurant group, is like a free wine-appreciation class. OK, you pay for the pours, but if you show the slightest interest in what's in your glass, master sommelier Chuck Furuya will be happy to share his knowledge about it and any other cool vintages he may have discovered from a vineyard on the slopes of Mount Vesuvius or boutique operations in California. You won't find a tired Robert Parker hit parade here. Furuya regularly holds “communal dinners” that are food-and-wine pairing bargains, and tastings with visiting winemakers. He just wants to spread the grape word. When the original Vino on Maui closed in June 2007, chef Keith Endo moved to the Oahu location. While there's a menu of signature small plates such as a warm Caprese salad with flash-fried mozzarella (awesome) and osso buco, Endo on any given night might do up to five specials, such as beautifully fatty braised kurobuta pork on cavatelli.
