Mariposa   Mariposa gracefully blends wellmannered service with a relaxed Island feel, with its veranda or indoor dining, ceiling fans and bright tropical artwork. Ladies who lunch dominate at midday, when you get signature Neiman Marcus bouillon and popovers as starters, then give way to a more varied crowd at dinner, including visitors and celebrating locals. We can never resist the Kahuku clam chowder at dinner, and recently enjoyed an exceptional appetizer of crispy Berkshire pork with black rice, apricot mustard and lü'au leaf puree and an entree of smoked duck with Maui onion jam. These dishes give a sense of the Mariposa approach: a tasteful fusion of East and West.
