In Kalihi and the newer location in Waipahu, baker Fernando Paez and family make the pastries and breads of their native Philippines — butterladen ensaymadas, bright purplecentered ube rolls, mung-bean filled mongo loaves and sweet, buttery Spanish rolls shaped like puffy ladyfingers and coated with breadcrumbs. Have no fear of the names or colors that are new to you; everything's delicious.
