Even little chefs can cook these two easy recipes, from "The Complete Idiot's Guide to Feeding Your Baby and Toddler."
CRUNCHY CHICKEN NUGGETS
Preheat oven to 400 degrees. Spray baking sheet with nonstick cooking spray. Combine flour and cheese in 1-gallon plastic bag.
Place the crushed cornflakes in a separate 1-gallon bag. Pour buttermilk into a shallow bowl. Add chicken pieces one at a time to the flour/cheese bag and shake until coated. Younger kids love to shake the bags, but if you don't want to use the bags, you can put the flour and cereal on separate plates and roll the chicken in them.
Dip each piece of coated chicken into the buttermilk, covering thoroughly, and let the extra buttermilk drain off. Place each chicken piece, one at a time, into the cornflake bag and shake to coat. Place coated chicken on prepared baking sheet. Cook for 5 minutes. Flip and cook for another 5 minutes or until done. Serves 4.

SMASHED ORANGE-SWEET POTATOES
Heat oven to 400 degrees. Place sweet potatoes on the middle rack and bake for 45 minutes or until tender. Remove from oven and slit lengthwise to cool. Scoop out inside of potato into a medium bowl. Mash with orange juice, margarine and cinnamon. Serves 4.
