Tasty salad's ingredients available all year

Q. I love trying new salads and wondered if you had a recipe for a fancy one my family could try even in the winter months.
A. This is a great salad for wintertime because it features apples and escarole, dried fruit and nuts, which are always available. The red onions and goat cheese complement the other flavors and colors and the dressing is a light vinaigrette made with champagne vinegar and a couple tablespoons each of canola oil and honey.
ESCAROLE PISTACHIO GOAT CHEESE SALAD
For the dressing:
In large serving bowl, layer escarole then apple, pistachios, red onion, currants and goat cheese.
Combine dressing ingredients (canola oil, champagne vinegar, honey, salt and pepper) in small food processor or blender by pulsing until well blended.
Drizzle over the salad ingredients and gently toss.
Makes 4 servings.
