Culinary Calendar

• Chefs Shigeto Yagi and Takayuki Matusmoto of Tokyo Tokyo, a new restaurant at the Kahala Mandarin Oriental, conduct a cooking demonstration at noon at Liberty House Ala Moana. Bara rice sushi and ebi shingo (shrimp fishcake) will be featured. Tickets are $10 for a seat and sampling, and include a $10 credit toward a $25 purchase in Liberty House’s home department and a dining certificate to Wasabi Bistro. 945-8023.

• Wild About Poke! Traditional and Off-the-Wall Poke Secrets, a cooking class with the poke master himself, Hawaii chef Sam Choy. 9-11 a.m. at Sam Choy’s Diamond Head Restaurant, sponsored by Kapiolani Community College. $25 fee. 734-9211.

• Sanitation, a 16-hour program, Feb. 3 and 10 for professionals in the food service industry. The National Restaurant Association Serve Safe Certification course is offered by Kapiolani Community College and is followed by a certification examination. To register, contact the Department of Labor and Industrial Relations, 586-8715.

• Vegetarian Cooking Class, 2-3:30 p.m. at Down to Earth Lifestyle Center, 2515 S. King St. Free. Call 947-7678 for information.

Coming up

• Feb. 8: Mind Your Manners, a class on dining etiquette conducted by Lori Wong, 5-8:30 p.m. at the Ka Ikena Dining Room at Kapiolani Community College. Participants will be served dinner and wine while brushing up on table skills. $50 fee. 734-9211.

• Feb. 8-March 15: The Vintage Program in Wine Appreciation and Service, a series of six classes, 7-9 p.m. Alan Jahns, general manager of JMD Beverages, teaches at JMD Educational Center; sponsored by UH Outreach College. 4135. 956-8244.
