Most bloggers who post recipes on their Web sites say desserts get the best response. If this recipe, from Clotilde Dusoulier's Chocolate & Zucchini blog, is typical of what's posted, it's no wonder.

The recipe is from "I Want Chocolate!" by Trish Deseine (Laurel Glen, 2003). And yes, the proportions are correct — lots of butter, chocolate, sugar and eggs to just a little more than a tablespoon of flour.

Melt-in-Your-Mouth Chocolate Cake

  • 7 ounces butter (14 tablespoons)
  • 7 3/4 ounces good-quality dark chocolate
  • Scant 1 1/4 cup sugar
  • 5 eggs
  • Rounded tablespoon of flour

Heat oven to 400 degrees.

Line an 8-inch round or square cake pan with parchment paper, cutting it to fit the bottom and the sides. (If you're using a nonstick pan or a silicon pan, just cut out a circle to line the bottom.)

Melt butter with chocolate in top of double boiler or in microwave oven (if the latter, do so slowly, at 50 percent power, a few seconds at a time, blending between each). Stir in sugar and allow to cool a little. Add eggs, one at a time, mixing well with a spoon between additions. Finally, stir in flour and mix well.

Bake for 25 minutes; center may still be slightly trembling. Let cake cool a little, then turn out on rack. Serve warm or wrap tightly in plastic wrap, refrigerate and take it out an hour before serving. May be baked 24 hours in advance. Top with a dollop of whipped cream, creme fraiche or a sprinkling of powdered sugar.
